Great American Backyard Campout

Great American Backyard CampoutAmerica is going camping on June 28th, 2014 as thousands of people take part in the Great American Backyard Campout. There will be tents, campfires (as long as there are no burn bans), and — you guessed it— S’mores! The Great American Backyard is an initiative that was started ten years ago by the National Wildlife Federation to inspire Americans to protect wildlife and to encourage children to get outside and enjoy an active and healthy lifestyle.

To help ensure that you get the most out of your camp out, we have created a small recipe guide of three of our favorite campout meals so that your little campers won’t go hungry. Remember, the key to any campfire meal is to keep it simple!

Breakfast

Cheesy Omelet

Ingredients:

  • Eggs
  • Cheese
  • Onion and/or green pepper (optional)
  • Salsa

Preparation:

Beat the eggs and pour a thin layer into a hot, greased skillet. Add salt and pepper to taste, then, add diced onion and/or green pepper. Lay thin slices of cheese on top. Cover immediately and cook on low heat for about a minute, then flip half the egg over to sandwich the cheese and veggies inside. Cover and cook for another half minute or so. Top with salsa.

Lunch

Author’s Favorite Wrap

Ingredients:

  • Chicken pieces
  • Sliced avocado
  • Alfalfa sprouts
  • Sliced tomato
  • Red onion slivers
  • Spoonful of ranch on top

Preparation:

Spread the ingredients out on a spinach tortilla. Then, once all the ingredients are on the tortilla, roll it up.

Dessert

Easy Fruit Cobbler

Ingredients:

  • Blueberries, sliced peaches, or apples
  • A sprinkle of cinnamon and sugar
  • A spoonful of Bisquick

Preparation:

Mix fruits of your choice with sugar and cinnamon and spread in a dutch oven. Add one spoonful of Bisquick mix onto the fruit mixture. Bake for twenty-five minutes.

With any camp out, it is important to remember some key essential items, such as granola bars and string cheese for those long nature hikes, a first aid kit, flashlight, a change of warm clothes, and insect repellent.

Also, this year, in support of NWF’s wildlife conservation work, the National Wildlife Federation’s Board of Directors has offered to donate $2 for every person who participates in this year’s Campout.
