What are the North Dakota food safety regulations? 

Food protection manager certification for at least one manager is recommended in North Dakota.  

Some local health authorities require Certified Food Protection Manager (CFPM) training, however.  

For example, as of 2020, the First District Health Unit (FDHU) requires a CFPM in charge at all times at establishments that are risk level 2 or that have ten or more food employees. Other health districts may have their own requirements. 

To qualify as a CFPM in the FDHU or in establishments governed by the North Dakota Food Code, you need to pass an approved CFPM course and exam like the ones offered at Learn2Serve by 360training. 

How long is the food manager certification good for? 

ANSI's CFPM certification is generally valid for a maximum of five years. Be sure to check your local regulations for any specific requirements.

Who should get their food manager certification? 

North Dakota Department of Health recommends that the person to earn certification is someone with supervisory or management responsibility over food preparation, food service, and/or training staff. Generally, this will mean the owner/operator, a manager, or a head chef. 

In the FDHU, where a CFPM is required on duty during all operating hours, larger restaurants, grocery stores, or other businesses will need shift managers or department managers to be certified, as well.

Food service and restaurant managers have many responsibilities, from customer service to operations to human resources and team management. 

But their food safety duties touch almost every part of their job. They must: 

  • Know local food safety regulations inside and out  
  • Designing appropriate policies and protocols to minimize food safety hazards 
  • Maintain records of a valid food worker card for each employee where required; train employees in food safety where food worker cards are not required 
  • Monitor the proper execution of food safety protocols and correct errors as needed 
  • Confirm that all third-party suppliers and their deliveries meet food safety standards

Due to the level of responsibility, food managers earn a significantly higher salary than servers and other food employees. According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the North Dakota foodservice industry:
