Under Georgia Food Service Rules and Regulations 511-6-1-.03(3), food service establishments that serve potentially hazardous food need at least one supervisory employee to be a Certified Food Safety Manager (CFSM).  

An individual can only serve as the CFSM for one establishment. They don't need to be on-premises at all times, but they do need to designate someone else to be in charge during operating hours when they're not present. 

To become a CFSM, you need to complete a food safety training program approved by the Georgia Department of Public Health and pass an exam accredited by an organization like the American National Standards Institute Conference for Food Protection (ANAB-CFP).
